Bacalao is a food from Mexico that shows up around Christmas time and means dried salted codfish. A commonly prepared version is Bacalao a la Vizcaina and is usually made with potatoes, tomatoes, capers and olives.

The Spanish Dessert I found is called the Drunken Sponge Cake or Bizcochos Borrachos. The Drunken Sponge Cake is a Sponge Cake drizzled with a sweet brandy sauce. Also on the outside it has some cinnamon and lemon spice. They are great with a cup of Spanish coffee.

Churros are a traditional Spanish cylindrical, cake-like pastry. Instead of being eaten plain churros are covered in cinammon sugar. Sometimes people stuff the inside of the churro with a filling such as chocolate.

The dessert I picked is called Roscón de Reyes better known as Kings Cake or Kings Ring. It is made with in a blunt pan covered in a glaze topping and topped with fruit jellies and powdered sugar. Hidden within the cake is either a coin or baby Jesus and a dried bean. Tradition states that whoever finds the baby Jesus gets good luck for the New Year and who ever gets the bean must pay for the cake.
